So here's the thing. I really do love cooking when I get home from work, but sometimes I'm just so hungry by the time I get here that I'm ready to eat my arm off and I can't wait for myself to really COOK, you know? These super easy vegan mini pizzas have become my absolute go-to on nights like that.
- Whole wheat tortillas
- Vegan tomato sauce (I use one from Trader Joe's)
- Garlic powder or granulated garlic
- Salt + Pepper
- Nutritional yeast
- Veg of your choice (for these, I used broccoli, zucchini, mushroom and spinach)
- Heat the oven to 375.
- Literally all you have to do is spread however much sauce you want onto the tortillas, sprinkle salt, pepper, and garlic and then add as much veg as you want. I like a LOT of veg, and I sprinkle nutritional yeast on before adding spinach on top (and then add more once it comes out of the oven!)
And that's it! It only needs to cook for about 15 mins or until the tortillas start getting nice and crispy. Cutting these into slices doesn't work very well for me, so I usually either just take bites out of it flat like this or if I'm feeling super polite I'll use a knife and fork.
